Anzac biscuits

A classic recipe that you will bake time and time again.

150g butter

  • 120g demerera sugar 80g golden syrup 165g plain flour

  • 1 tsp bicarb soda

  • 80g desiccated coconut 80g rolled oats


Preheat oven to 160°C. Line two baking trays with baking paper.

Place the flour, sugar, coconut and rolled oats in a mixing bowl and mix to combine. Melt the butter and golden syrup together in a small saucepan. Remove from the heat, add the bicarb soda. Stir to combine and then pour over the oat mixture.

Roll tablespoonfuls of the mixture into balls and place onto baking paper. Flatten slightly and bake for 15 minutes, or until golden.

Remove from the oven and leave to cool completely on a wire rack.
